For dinner tonight Pastor made fish & chips! He was extra proud of himself today after mowing the lawn and making dinner. He caught the fish back in June when we went to the Gulf this summer. It was delish then just as it was tonight.
A couple of friends of ours treated us to some fish last summer up at Copan Lake. That fish was awesome! Well actually it is all in the batter of the fish that makes it so good. Since then, we have been preparing our fish just like they did. I actually don’t care for fish too much but this batter… It’s THAT good.
Pastor wouldn’t give me the exact recipe for the batter… all I know is that there is Jiffy Cornbread Mix in it. That’s the secret ingredient. We also enjoyed some fries “chips”, hushpuppies and homemade tarter sauce.
For the tarter sauce you need:
1/4 cup of Dill Pickles finely chopped
1tb of Lime juice
1/3 cup of Mayo
1/4 cup of Sour Cream
Dash of Dill Weed
Salt and Pepper to taste
And just stir it all together. It’s that simple and tastes yummy!
