So what gets mixed in a pitcher and something I can’t resist?
It’s our Pico Salsa I tell ya and it’s to die for!
I can’t help my self when it comes to this stuff. I and anyone that is near, will devour a full bag of chips trying to scoop this goodness in our mouths. Let me tell you what’s in it:
Pico Salsa Recipe:6-8 chopped Tomatoes
2 diced medium-sized Onions
a bunch of Cilantro chopped
the juice of 1 Lime
3 cloves of minced Garlic
2 Jalapeños finely chopped
1/2 cup of Oil
1/4 cup of Red Wine Vinegar
Sea Salt to taste, lots of it
some Pepper to taste
a Pitcher to mix it in
I bet you’re thinking, “Why the pitcher?” and I wish I had an answer for you but I don’t. I just love making this recipe in a pitcher. This recipe is so easy, you chop & dice and mix and pour and stir and stir and taste and taste and stir and stir and taste again. There is nothing to it.
This is also a great recipe to keep adding to throughout the week. Once we make Pico Salsa, it doesn’t last very long, normally not even through the evening, however it just gets better as it sets. So when we end up eating all of the veggies out of the pitcher and we are left with the amazing juice, we add in more Tomatoes & Onions. We add to this recipe about 3 to 4 times in the week until we have made enough trips to the store to get more Tomatoes & Onions that we don’t want to go back. Well that is unless Pastor wants to stop by the ammo counter at Walmart and while he is there get some more T&O’s … but that’s another story.
